Today I have a treat for you. I’m going to share with you my secret weapon for party appetizers. This appetizer mixes up quickly and easily and goes like hot cakes, because they taste SO GOOD!
It all starts with 5 easy to get your hands on ingredients.
- Thin Baguette
- Cucumbers
- Cream Cheese
- Greek Yogurt
- Italian Seasonings Packet
Before you start anything else, let your cream cheese sit on the counter to start softening up.
Cut up the cucumbers diagonally and set aside. No one will notice if you munch a few.
Using a skinny loaf of French bread, cut into slices. I prefer using an electric knife because it goes much faster and the little slices look good. Sometimes you can even find baguettes in the bakery section that are already sliced.
Using the cream cheese that has been on the counter and softened up a bit, add 3 spoonfuls of greek yogurt and a packet of Italian seasoning. The yogurt is going to make that cream cheese so much easier blend and to spread! And the Italian seasoning packet is makes the flavor so good!
You can prep these separate ingredients ahead of time, but wait to put them altogether until closer to your party start. These things taste best fresh! They’ll be fine for a couple hours, but I definitely would not prep these the day before because you’d have to keep them in the fridge and the break would get weird and soggy with the cream cheese and cucumber on top.
When it’s time – on each bread slice, spread cream cheese mixture and then top with a cucumber slice. Repeat until you run out. That’s it, it’s so simple and so good!

Last time I made these was for a girls night celebrating a friend moving away. We had an awesome spread, thanks to lots of help! I’m happy to say the cucumber sandwiches were a hit. They always are!!

Yum! These also have great flavor (and color) if you sprinkle them with a little dried dill! We’re been gobbling ours up straight out of the garden!
I do something very similar but use the little rye cocktail bread loaf so they are all square uniform slices and sprinkle with dry dill on top. Have also used veggie flavored soft cream cheese. Always a hit!
Mmmm! Your variations sound good too. So easy to get these right!
