Yogurt Cup "Pie"

A fruit salad side dish that could be served with dinner or afterwards for dessert!
Ingredients
  • ~4 cups of mixed frozen fruit (what will fit in your pie/serving dish)
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Raw, unfiltered Honey
  • ~ 2 cups or more Vanilla Greek Yogurt (or whatever flavor you want, but something thick like Greek yogurt will make for a creamier, melt-in-your-mouth result)
Instructions
  1. Create your mix of frozen fruits by filling the pie dish with whatever combo you prefer. We've been enjoying a mix that has a lot of frozen mixed berries, with some peaches, pineapple and strawberries. Whatever you've got in the freezer will be great.
  2. Dump the fruit into a colander and rinse with warm-cold water.
  3. Let the colander drip dry on a paper towel or in the sink for a little bit until the water has had a good chance to get out.
  4. Put the fruit back into the pie dish.
  5. Mix in Lemon Juice and Honey, right in the pie dish with a spoon.
  6. Mix the yogurt in it's container until it is an even consistency. Pour over the fruit.
  7. Spread the yogurt over the fruit. Don't spread until you have it all out there, or it will start to mix with the fruit juices and change the color. It still may happen a little anyway, it won't hurt it.
  8. Top with a fruit garnish, like sliced strawberry, if desired.
  9. Keep refrigerated until serving.
